Prepare Crab Cake Mixture
In a mixing bowl, combine crab meat, bread crumbs, mayonnaise, mustard, egg, Old Bay seasoning, salt, and black pepper. Mix until well combined.

Shape the mixture into 2 round patties.

Cook Spinach and Tomatoes
Add spinach and cherry tomatoes to the skillet. Sauté until spinach is wilted and tomatoes are slightly softened, about 3-4 minutes. Season with salt and black pepper.
Poached Eggs

Prepare Poaching Liquid
In a saucepan, bring water and vinegar to a simmer over medium heat.

Poach Eggs
Crack each egg into a small bowl. Gently slide the eggs into the simmering water. Poach for about 3-4 minutes, or until whites are set but yolks are still runny.

Whisk Egg Yolks
In a heatproof bowl, whisk together egg yolks and lemon juice until pale and fluffy.

Make Hollandaise Sauce
Slowly drizzle in the melted butter while continuously whisking until the sauce thickens. Season with salt and cayenne pepper.
Hash Aioli

In a bowl, combine hash browns, mayonnaise, garlic powder, salt, and black pepper. Mix well until combined.
