Method

Crab Cakes

    Prepare Crab Cake Mixture

    In a mixing bowl, combine crab meat, bread crumbs, mayonnaise, mustard, egg, Old Bay seasoning, salt, and black pepper. Mix until well combined.

    Form Crab Cakes

    Shape the mixture into 2 round patties.

    Cook Crab Cakes

    Heat olive oil in a skillet over medium heat. Add crab cakes and cook for about 4-5 minutes on each side, or until golden brown.

Sautéed Spinach and Tomatoes

    Sauté Garlic

    In a separate skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

    Cook Spinach and Tomatoes

    Add spinach and cherry tomatoes to the skillet. Sauté until spinach is wilted and tomatoes are slightly softened, about 3-4 minutes. Season with salt and black pepper.

Poached Eggs

    Prepare Poaching Liquid

    In a saucepan, bring water and vinegar to a simmer over medium heat.

    Poach Eggs

    Crack each egg into a small bowl. Gently slide the eggs into the simmering water. Poach for about 3-4 minutes, or until whites are set but yolks are still runny.

    Drain Poached Eggs

    Remove eggs with a slotted spoon and place them on a paper towel to drain excess water.

Hollandaise Sauce

    Melt Butter

    Melt the butter in a saucepan over low heat until just melted. Let it cool slightly.

    In a heatproof bowl, whisk together egg yolks and lemon juice until pale and fluffy.

    Slowly drizzle in the melted butter while continuously whisking until the sauce thickens. Season with salt and cayenne pepper.

Hash Aioli

    Prepare Aioli

    In a bowl, combine hash browns, mayonnaise, garlic powder, salt, and black pepper. Mix well until combined.

Assembly

    Layer Ingredients

    On a plate, layer the sautéed spinach and tomatoes. Place the crab cakes on top, followed by the poached eggs.

    Serve

    Drizzle the hollandaise sauce over the top and serve with hash aioli on the side.
