Preparation

  1. 1

    Prepare the Crab

Bring a large pot of salted water to a boil. Add the Dungeness crabs and cook for 10-15 minutes until fully cooked. Remove the crabs, cool, and crack them open to extract the meat. Set the crab meat aside.

  2. 2

    Prepare the Vegetables

While the crabs are cooking, dice the potatoes, onion, celery, and bell pepper. Cut the corn into bite-sized pieces and mince the garlic.

  3. 3

    Cook the Sausage

In a large pot, over medium heat, add the Andouille sausage and cook until browned, about 5-7 minutes. Remove and set aside.

Cooking the Chowder

  1. 4

    Sauté Aromatics

In the same pot used for the sausage, add the onion, celery, bell pepper, and garlic. Sauté for about 5 minutes until softened.

  2. 5

    Add Seasonings

Stir in the Cajun seasoning and bay leaves, cooking for another minute until fragrant.

  3. 6

    Combine Ingredients

Add the diced potatoes, corn, cooked sausage, chicken broth, and heavy cream to the pot. Stir well to combine.

  4. 7

    Simmer

Bring the mixture to a simmer. Cook for about 20 minutes, until the potatoes are tender.

  5. 8

    Add Crab Meat

Once the potatoes are tender, gently fold in the crab meat and lemon juice. Heat through for an additional 5 minutes.

Finishing Touches

  1. 9

    Garnish and Serve

Remove from heat, discard the bay leaves, and ladle the chowder into bowls. Garnish with fresh parsley and chopped green onions before serving.
