Bacon Gouda Bites

    Preheat the Oven

    Preheat your oven to 200°C (400°F). This ensures that the bacon gouda bites will bake evenly and become crispy.

    Prepare the Bacon

    Cook the bacon slices in a skillet over medium heat until crispy, about 6-8 minutes. Remove from the skillet and place on paper towels to drain excess grease.

    Prepare the Gouda

    While the bacon is cooking, cut the Gouda cheese into small cubes, approximately 1 cm in size.

    Prepare Phyllo Pastry

    Take one sheet of phyllo pastry and lay it flat. Brush lightly with olive oil, then place another sheet on top. Repeat this process until you have about 4-5 layers.

    Assemble Bites

    Cut the layered phyllo pastry into squares, about 10 cm on each side. In the center of each square, place a cube of Gouda cheese and a piece of crispy bacon. Sprinkle a pinch of black pepper and garlic powder over the top.

    Fold the corners of the phyllo pastry over the filling to form a pouch. Brush the tops with more olive oil to promote browning.

    Place the assembled bites on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy.

Sweet Chili Sauce

    In a small bowl, mix together the sweet chili sauce, honey, and lime juice until well combined.

    Once the bacon gouda bites are baked and slightly cooled, serve them warm with the sweet chili sauce on the side for dipping.
