Prepare the buns

    Make the Dough

    In a bowl, mix warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy. In a separate bowl, combine flour, baking powder, and salt. Add the yeast mixture and vegetable oil, then knead until smooth. Cover and let rise for 1 hour.

    Shape the Buns

    Once the dough has risen, punch it down and divide it into small balls. Flatten each ball into a disc and set aside for another 30 minutes.

Prepare the filling

    Cook the Chicken

    In a pan, heat sesame oil. Add minced garlic and lemongrass, sauté for 1 minute. Add chicken thighs, soy sauce, and black pepper. Cook until chicken is done (about 10-12 minutes). Shred the chicken once cooked.

Prepare the pickled vegetables

    Pickle the Vegetables

    In a bowl, mix rice vinegar, sugar, and salt. Add julienned daikon and carrots. Let sit for at least 30 minutes.

Steam the buns

    Steam

    Prepare a steamer. Place the buns in the steamer basket, cover, and steam for about 15 minutes until fluffy.

Assemble the dish

    Assemble

    Once the buns are steamed, fill each bun with shredded chicken, pickled veggies, cucumber slices, drizzle with Kewpie mayo, and top with fresh coriander.
