Preparation
- 1
Prepare the Veal
Season the bone-in veal chops with salt and black pepper. Allow to sit at room temperature for about 30 minutes.
- 2
Cook the Veal
In a large skillet, heat olive oil over medium-high heat. Add the veal chops and sear for about 5-7 minutes on each side until golden brown and cooked to your desired doneness. Remove from skillet and set aside.
Sauce Preparation
- 3
Make the Vodka Rose Sauce
In the same skillet, lower the heat to medium and add minced garlic, cooking until fragrant. Then, add vodka and simmer until reduced by half. Stir in crushed tomatoes, heavy cream, red pepper flakes, and chopped basil. Simmer for about 10 minutes, stirring occasionally until thickened.
Assembly
- 4
Combine and Serve
Place the seared veal chops back into the skillet with the sauce. Spoon the sauce over the chops and cook for an additional 2-3 minutes. Plate the veal, top with stracciatella cheese, and garnish with fresh basil leaves and a drizzle of house-made bomba.
