Preparation

  1. 1

    Prepare the Glaze

In a bowl, combine brown sugar, honey, Dijon mustard, ground cloves, black pepper, garlic powder, and apple cider vinegar. Mix until smooth.

  2. 2

    Score the Ham

Preheat your smoker to 225°F (107°C). Score the surface of the ham in a diamond pattern, making shallow cuts about 1 inch apart.

  3. 3

    Apply the Glaze

Brush the glaze generously over the scored surface of the ham.

Smoking

  1. 4

    Place in Smoker

Place the ham in the smoker, bone side down. Smoke the ham for about 4-6 hours, or until it reaches an internal temperature of 140°F (60°C).

  2. 5

    Baste

Every hour, baste the ham with more glaze to enhance flavor and moisture.

  3. 6

    Rest and Serve

Once done, remove the ham from the smoker and let it rest for 20-30 minutes before slicing and serving.
