Preparation of Foie Gras

Season the Foie Gras

Sprinkle the foie gras with salt and white pepper evenly on all sides. Then, drizzle the cognac over it and let it marinate for at least 30 minutes at room temperature.

Sear the Foie Gras

Heat a skillet over medium-high heat. Once hot, add the foie gras and sear for about 2-3 minutes on each side until golden brown, ensuring not to overcrowd the pan.

Rest

Remove the foie gras from the skillet and let it rest on a paper towel to absorb excess fat.

Assembly of Dish

Prepare the Accompaniments

Arrange the fig jam, apple compote, microgreens, and toasted brioche on a serving platter.

Plate the Foie Gras

Slice the seared foie gras and place it on top of the toasted brioche. Drizzle with balsamic reduction.
