Marinating and Cooking the Lamb Chops

Prepare Marinade
In a bowl, mix together the olive oil, lemon juice, minced garlic, dried oregano, ground cumin, salt, and black pepper to create the marinade.

Marinate Lamb Chops
Add the mini lamb chops to the marinade and coat them well. Cover and refrigerate for at least 1 hour, preferably overnight.

Preheat Grill
Preheat a grill or grill pan over medium-high heat. Remove the lamb chops from the marinade and discard the marinade.

Grill Lamb Chops
Grill the lamb chops for about 3-4 minutes on each side for medium-rare, or until cooked to your desired doneness.
Preparing the Mediterranean Couscous

Cook Couscous
In a saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes.

Mix Couscous Ingredients
Fluff the couscous with a fork and mix in the cherry tomatoes, cucumber, red onion, parsley, lemon zest, salt, and black pepper.
