Method

Prepare Duck Confit

    Cook the Duck

    In a large pot, submerge duck legs in duck fat and add salt, peppercorns, and thyme. Cook on low heat for about 2-3 hours until tender. Let cool and shred the meat.

Make the Hash

    Sauté Ingredients

    In a large skillet, heat olive oil over medium heat. Add sweet potatoes and cipollini onions, season with salt and pepper. Cook until sweet potatoes are tender and lightly browned, about 15 minutes.

    Combine with Duck

    Add the shredded duck confit to the skillet and stir to combine. Cook for an additional 5 minutes, allowing the flavors to meld.

Fried Duck Eggs

    Fry the Eggs

    In a separate pan, melt butter over medium heat. Crack the duck eggs into the pan and fry until the whites are set but yolks are still runny, about 3-4 minutes.

Prepare Spiced Hollandaise

    Make Hollandaise

    In a bowl, whisk together egg yolks and lemon juice until pale. Slowly drizzle in melted butter while whisking continuously until thick. Add cayenne and salt to taste.

Grill Baguette

    Grill the Baguette

    Brush baguette slices with olive oil and grill until golden brown, about 2-3 minutes on each side.

Assemble the Dish

    Plate the Hash

    Spoon the sweet potato and duck confit hash onto plates, top each serving with a fried duck egg, drizzle with spiced hollandaise, and serve alongside grilled baguette and baby greens.
