    Prepare the Fillings

    In a skillet over medium heat, melt a little butter and add the onions. Cook until caramelized, about 10-15 minutes. Set aside. In the same skillet, add the roasted peppers and spinach, cooking until the spinach is wilted, about 2-3 minutes. Set aside.

    Whisk the Eggs

    In a bowl, whisk together the eggs, salt, and pepper until well combined.

Cooking the Omelette

    Cook the Omelette

    In a non-stick skillet, heat the remaining butter over medium heat. Pour in the egg mixture and cook until the edges begin to set, about 2-3 minutes.

    Add the Fillings

    Once the edges are set, add the caramelized onions, roasted peppers, spinach, cheddar cheese, goat cheese, diced ham, and either tomatoes or mushrooms to one half of the omelette.

    Fold and Serve

    Carefully fold the other half of the omelette over the fillings. Cook for an additional 1-2 minutes until the cheese is melted and the eggs are fully cooked. Slide the omelette onto a plate and serve hot.
