Preparation of Branzino

Prepare the Fish
Preheat your oven to 400°F (200°C). Rinse the branzino under cold water and pat dry. Rub the fish with olive oil, salt, and black pepper, inside and out. Place the fish on a baking sheet lined with parchment paper.

Cook the Ragu
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add cherry tomatoes, olives, capers, basil, salt, and pepper. Cook for about 10 minutes until the tomatoes soften and the mixture thickens.

Baking the Fish

Bake the Branzino
Place the branzino in the preheated oven and bake for 20-25 minutes or until the flesh is opaque and flakes easily with a fork.
Serving

Plate the Dish
Once the fish is done, place it on a serving platter. Top with the tomato and olive ragu and drizzle with salsa verde. Serve with lemon wedges on the side.
