Prepare the Blueberry Mixture
In a medium saucepan, combine the fresh blueberries, granulated sugar, and water. Cook over medium heat until the blueberries have released their juices and the sugar has dissolved, about 5-7 minutes.

Blend the Mixture
Remove the saucepan from heat and let the mixture cool slightly. Pour the mixture into a blender and blend until smooth. You can strain it through a fine mesh sieve if you prefer a smoother texture.

Add Lemon and Salt
Stir in the lemon juice and a pinch of salt to enhance the flavor.

Freeze the Sorbetto
Pour the blueberry mixture into a shallow container and place it in the freezer. After about 45 minutes, stir the mixture with a fork to break up any ice crystals. Repeat this every 30 minutes until the sorbetto is fully frozen and fluffy, about 2-3 hours.

Serve
Scoop the sorbetto into bowls or dessert cups and serve immediately.
