Add Eggs
Allow the mixture to cool slightly, then add the eggs one at a time, mixing well after each addition until the dough is smooth and shiny.

Bake the Shells
Preheat the oven to 400°F (200°C). Drop spoonfuls of dough onto a lined baking sheet. Bake for 20-25 minutes until golden brown and puffed up. Do not open the oven door during baking.

Cool the Shells
Remove from the oven and let the shells cool on a wire rack.
Chocolate Sauce

Make the Sauce
In a small saucepan over medium heat, combine the heavy cream and chocolate chips. Stir until melted and smooth. Remove from heat and stir in vanilla extract.
Assembly

Fill the Shells
Once the puff pastry shells are cool, cut a small hole in the bottom of each. Fill with French vanilla ice cream using a piping bag or small spoon.

Serve
Drizzle warm chocolate sauce over the filled profiteroles and serve immediately.
