Prepare the Crust
Preheat the oven to 350°F (175°C). In a bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even crust. Bake the crust for 8-10 minutes until lightly browned. Remove from the oven and set aside to cool.

Make the Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar, mixing until well combined. Add the sour cream, lemon juice, and vanilla extract, and mix until smooth. Add the eggs one at a time, mixing on low speed until just combined after each addition.

Combine and Bake
Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for 55-65 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

Cool and Serve
Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight. Before serving, top with fresh strawberries. Slice and enjoy your One Eleven Cheesecake!
