Method
Cake Preparation
- 1
Preheat Oven
Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
- 2
Melt Chocolate and Butter
In a medium saucepan, melt the dark chocolate and unsalted butter over low heat, stirring until smooth. Remove from heat.
- 3
Mix Ingredients
Stir in the granulated sugar until combined. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, cocoa powder, and a pinch of salt until fully incorporated.
- 4
Bake the Cake
Pour the batter into the prepared cake pan and bake for 25-30 minutes. The cake should be set around the edges but still slightly soft in the center. Let it cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
- 5
Prepare Ganache Glaze
For the ganache, heat 1 cup of heavy cream until just simmering, then pour over 8 oz of chopped dark chocolate in a bowl. Let it sit for 5 minutes, then stir until smooth.
- 6
Glaze the Cake
Once the cake is completely cooled, pour the ganache glaze over the top, allowing it to drip down the sides.
- 7
Serve with Raspberry Purée and Whipped Cream
Serve slices of the cake with raspberry purée and whipped cream on the side for an elegant finish.
