Making the Caramel
In a saucepan over medium heat, combine 1 cup of granulated sugar with 1/4 cup of water. Stir until the sugar dissolves and then stop stirring. Allow it to boil until it reaches a deep amber color. Remove from heat and carefully add 1/2 cup of heavy cream, stirring constantly until smooth. Set aside to cool.

Preparing the Bread Pudding Mixture
Preheat your oven to 350°F (175°C). In a large bowl, combine the chopped day-old bread, dark chocolate, and salt. In another bowl, whisk together the remaining heavy cream, whole milk, eggs, sugar, and vanilla extract. Pour this mixture over the bread and chocolate, ensuring everything is well coated. Allow it to sit for 15 minutes to soak.

Baking the Pudding
Transfer the mixture to a greased 9x13 inch baking dish. Drizzle half of the caramel over the top. Bake in the preheated oven for 45-50 minutes, or until the pudding is set and the top is golden brown.

Let the bread pudding cool slightly before serving. Drizzle with the remaining caramel and serve warm with a scoop of vanilla ice cream.
