Two (2) flour tortillas with melted jack and cheddar cheese and your choice of chicken, chorizo, ground beef, brisket or vegetables; served with fresh salsa, beans and rice. Add 2nd ingredient for just $1.25.

Prepare the Filling
In a skillet, heat the oil over medium heat. Add your choice of chicken, chorizo, ground beef, brisket, or vegetables. Cook until heated through and slightly crispy, about 5-7 minutes.

Assemble the Quesadilla
Lay one flour tortilla on a flat surface. Sprinkle half of the jack and cheddar cheese evenly over the tortilla. Add your cooked filling of choice on top, and then sprinkle the remaining cheese over the filling. Top with the second tortilla.

Cook the Quesadilla
Heat a non-stick skillet over medium heat. Carefully place the assembled quesadilla in the skillet. Cook for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese has melted.

Serve
Remove from the skillet and let it cool for a minute before slicing into wedges. Serve with fresh salsa, beans, and rice on the side.
