    Prepare the Ingredients

    Gather all your ingredients. If using home potatoes, dice them into small cubes.

    Cook the Meat

    In a skillet over medium heat, add butter or oil. Once hot, add your choice of ham, bacon, or sausage. Cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.

    Cook the Eggs

    In the same skillet, crack the eggs into the pan and cook them to your desired style (scrambled, fried, etc.). Season with salt and pepper to taste.

    Cook the Home Potatoes or Pinto Beans

    If using home potatoes, add them to the skillet and cook until golden brown and tender, about 10-15 minutes, stirring occasionally. If using pinto beans, heat them in a separate pot until warmed through.

    Toast or Warm the Tortilla

    Toast the bread slice until golden brown, or warm the tortilla in a dry skillet for about 30 seconds on each side.

    Serve

    On a plate, serve the cooked eggs, your choice of meat, home potatoes or pinto beans, and toast or tortilla.
