Cook the Fettuccine
Bring a large pot of salted water to a boil. Add the fettuccine noodles and cook according to package instructions until al dente. Drain and set aside.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent. Add the diced jalapeno and continue to sauté for another 2 minutes. Then, add the halved cherry tomatoes and cook for an additional 3-4 minutes until softened.

Prepare the Alfredo Sauce
Add the minced garlic to the skillet and sauté for 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and the sauce is creamy. Season with salt and black pepper to taste.

Combine Everything
Add the cooked fettuccine noodles to the skillet and toss to coat in the sauce. Cook for 1-2 minutes until heated through.

Remove from heat, sprinkle with chopped cilantro, and serve hot. Optionally, add grilled chicken, tilapia, or shrimp for an additional cost.
