Prepare the Double Boiler
Fill a medium saucepan with a couple of inches of water and bring it to a simmer. Place a heatproof bowl on top, ensuring it does not touch the water.

Whisk the Egg Yolks
In the heatproof bowl, combine the egg yolks and lemon juice. Whisk vigorously until the mixture is thickened and pale in color.

Add the Butter
Melt the unsalted butter in a separate saucepan. Gradually add the melted butter to the egg yolk mixture while whisking continuously until the sauce is smooth and emulsified.

Season the Sauce
Add salt and a pinch of cayenne pepper to taste. Whisk to combine.
