Two poached eggs on your choice of ham, bacon, pork or turkey sausage, brisket, mushrooms, or artichoke hearts, on grilled English muffin halves, smothered in your choice of red or green chile hollandaise, Mexican Hollandaise or regular hollandaise and served w/ potatoes. Two ingredients $16.50;Three ingredients $17.25.

    Prepare the Hollandaise Sauce

    In a double boiler, whisk together the egg yolks and lemon juice until thickened. Gradually add melted butter while whisking continuously. Stir in red or green chile, and season with salt and pepper to taste. Keep warm.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide them into the water. Poach for about 3-4 minutes for soft yolks. Remove with a slotted spoon and drain on paper towels.

    Cook the Protein

    In a skillet, cook your choice of protein until heated through or golden brown. If using mushrooms or artichoke hearts, sauté them until tender.

    Toast the English Muffins

    Split the English muffins and toast them until golden brown.

    Assemble the Eggs Benedict

    On each toasted muffin half, layer the cooked protein, followed by a poached egg. Generously spoon the hollandaise sauce over the top.

    Serve with Potatoes

    Boil or roast the potatoes until tender. Season with salt and pepper, and serve alongside the Eggs Benedict.
