    Prepare the Vegetables

    Dice zucchini, yellow squash, and Mexican squash into small pieces. In a skillet, sauté the mushrooms and diced squashes over medium heat until they are tender.

    Add Ingredients

    Stir in the green chile, corn, and half of the creamy cheese sauce into the sautéed vegetables. Cook for an additional 2-3 minutes until heated through.

    Layer the Enchiladas

    Preheat the oven to 350°F (175°C). In a baking dish, spread a little of the remaining creamy cheese sauce at the bottom. Place two blue corn tortillas on top. Add a layer of the vegetable mixture and sprinkle with yellow and jack cheese. Repeat layers until all ingredients are used, finishing with a layer of cheese on top.

    Bake

    Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.

    Serve

    Remove from the oven and let sit for a few minutes before serving. Optionally top with a fried egg or additional proteins like chicken, ground beef, or shrimp.
