Breakfast Enchiladas Recipe

Two blue corn tortillas stuffed with pork or turkey sausage, or brisket; onions and cheese, covered with red or green chile. Served with your choice of home potatoes or pinto beans and toast or tortilla. Add an egg for $1.25.

    Cook the Filling

    In a skillet over medium heat, cook the sausage until browned. Add the diced onion and sauté until translucent.

    Prepare the Tortillas

    Warm the blue corn tortillas in a separate skillet or microwave until soft.

    Assemble the Enchiladas

    Place the cooked sausage and onion mixture in each tortilla, sprinkle with cheese, and roll them up tightly.

    Add Sauce

    Place the enchiladas seam-side down in a baking dish and pour the red or green chile sauce over the top. Sprinkle with additional cheese if desired.

Cooking

    Bake

    Preheat the oven to 350°F (175°C) and bake the enchiladas for 20-25 minutes until heated through and cheese is melted.

    Prepare the Sides

    While the enchiladas are baking, prepare your choice of home fries or heat the pinto beans. Toast the bread or warm another tortilla.

    Optional Egg

    If adding an egg, cook it to your preference (fried, scrambled, or poached) while the enchiladas bake.
