Prepare the Ingredients
Slice the pork belly into bite-sized pieces. Chop the tofu into cubes. Mince the garlic and ginger. Slice the green onions, separating the white and green parts.

Cook the Pork Belly
In a large pot, heat the sesame oil over medium heat. Add the pork belly and cook until browned and cooked through, about 5-7 minutes.

Add Aromatics
Add the minced garlic, ginger, and white parts of the green onions to the pot. Sauté for another 2-3 minutes until fragrant.

Incorporate Kimchi
Stir in the kimchi and cook for 2-3 minutes to enhance the flavor.

Add Broth and Seasonings
Pour in the vegetable broth and soy sauce. Season with salt and black pepper to taste. Bring to a boil.

Simmer with Tofu and Udon
Once boiling, lower the heat and add the cubed tofu and udon noodles. Simmer for about 5-10 minutes until the noodles are cooked through and the flavors meld.
