Steak Tartare Preparation

    Prepare the Beef

    Finely chop the Wagyu beef and place it in a mixing bowl.

    Mix Ingredients

    Add the shallots, capers, Dijon mustard, Worcestershire sauce, olive oil, salt, and black pepper to the beef. Mix gently until combined.

Sofrito Preparation

    Cook Sofrito

    In a pan, heat olive oil over medium heat. Add chopped red bell pepper, garlic, and onion. Cook until softened and fragrant.

Cured Egg Yolk Preparation

    Cure the Yolks

    In a small bowl, cover the egg yolks with sea salt. Let them cure in the refrigerator for 3-4 days until firm.

Assembly

    Plate the Tartare

    On a plate, form a mound of the Wagyu steak tartare. Top with a cured egg yolk and a few pieces of pickled herring.

  2. 6

    Serve with Crackers

    Serve the tartare with crackers on the side and garnish with the sofrito.
