Preparation and Cooking
Prepare the Beets
Preheat the oven to 400°F (200°C). Wash the golden beets thoroughly, then wrap each beet individually in aluminum foil. Place them on a baking sheet and roast in the preheated oven for about 45-60 minutes or until tender when pierced with a fork.
Prepare the Fennel
While the beets are roasting, slice the fennel bulb thinly and set aside. You can save the fronds for garnish.
Make the Dressing
In a small bowl, whisk together sherry vinegar, orange juice, olive oil, salt, and black pepper to taste.
Combine Ingredients
Once the beets are done roasting, allow them to cool slightly before peeling the skins off. Cut the beets into wedges and place them in a large bowl. Add the sliced fennel and drizzle with the dressing. Toss gently to combine.
Serve
Plate the roasted beets and fennel mixture. Shave Tete de Moine cheese over the top, and garnish with fresh dill and fennel fronds. Serve warm or at room temperature.
