Prepare the Cornish Hen
Preheat your oven to 375°F (190°C). Season the Cornish hen with salt, pepper, and half of the fennel pollen. Place it in a roasting pan.

Cook the Italian Sausage
In a skillet over medium heat, cook the Italian sausage until browned and fully cooked. Remove from heat and set aside.

Prepare the Caponata
In the same skillet, add chopped vegetables (like eggplant, tomatoes, and bell peppers) to make the caponata. Sauté until tender, then mix in the cooked sausage.

Assemble and Bake
Stuff the Cornish hen with the caponata mixture. Drizzle Calabrian honey over the hen, then sprinkle the remaining fennel pollen on top. Bake for 45-50 minutes or until the internal temperature reaches 165°F (75°C).

Remove the hen from the oven and let it rest for 10 minutes before serving. Garnish with toasted almonds and serve warm.
