Focaccia

Savory Creme Fraiche

Chanterelle Mushrooms

Method

Focaccia Preparation

  1. 1

    Make the Dough

Knead the dough on a floured surface for about 10 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour or until doubled in size.

  2. 2

    Shape and Rise

Preheat the oven to 425°F (220°C). Once the dough has risen, press it into a greased baking sheet. Dimple the surface with your fingers, drizzle olive oil, and sprinkle with rosemary. Let it rise for another 20 minutes.

  3. 3

    Bake

Bake for 20-25 minutes until golden brown. Let cool before slicing.

Garden Pea Pesto Preparation

  1. 4

    Blend Ingredients

In a food processor, combine garden peas, basil, pine nuts, garlic, parmesan, salt, and black pepper. Pulse until coarsely blended.

  2. 5

    Add Olive Oil

While the processor is running, slowly drizzle in olive oil until the pesto reaches a smooth consistency. Adjust seasoning if needed.

Savory Creme Fraiche Preparation

  1. 6

    Mix Ingredients

In a bowl, combine creme fraiche, lemon juice, chives, salt, and black pepper. Mix well until combined.

Chanterelle Mushrooms Preparation

  1. 7

    Sauté Mushrooms

In a skillet over medium heat, melt the butter. Add garlic and sauté for 1 minute. Add chanterelle mushrooms, thyme, salt, and pepper. Cook until mushrooms are tender and golden, about 5-7 minutes.
