    Chop the Vegetables

    Finely chop the onion and garlic cloves. Set aside.

    Prepare the Tomatoes

    Core and roughly chop the ripe tomatoes.

    Prepare the Broth

    Measure out the vegetable broth and set aside.

Cooking

    Sauté the Onions and Garlic

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened. Add the garlic and sauté for an additional 1-2 minutes until fragrant.

    Add the Tomatoes and Broth

    Add the chopped tomatoes to the pot along with the vegetable broth. Stir well to combine.

    Season the Soup

    Add salt and black pepper to the pot. Bring to a boil, then reduce heat and let simmer for 20-30 minutes until the tomatoes are soft.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup in batches to a blender, blending until smooth, then return to the pot.

    Add the Basil

    Stir in the fresh basil leaves and let the soup simmer for an additional 5 minutes.

Serving

    Serve the Soup

    Ladle the soup into bowls or cups. If desired, drizzle with heavy cream and sprinkle with Parmesan cheese for garnish.
