Balsamic Vinaigrette

Method

Preparing the Salad

  1. 1

    Prepare the Salad Ingredients

In a large bowl, combine the mixed greens, sliced strawberries, thinly sliced red onion, halved cherry tomatoes, and candied walnuts. Toss gently to mix.

Cooking the Salmon

  1. 2

    Sear the Salmon

Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Season the salmon fillets with salt and black pepper. Once the oil is hot, place the salmon fillets skin-side down in the skillet. Cook for about 4-5 minutes, then carefully flip them and cook for an additional 3-4 minutes until the salmon is cooked through and flakes easily with a fork.

Making the Balsamic Vinaigrette

  1. 3

    Prepare the Dressing

In a small bowl, whisk together the balsamic vinegar, honey, Dijon mustard, and 5 tablespoons of olive oil. Season with salt and black pepper to taste. Adjust the seasoning if necessary.

Assembling the Salad

  1. 4

    Combine and Serve

Once the salmon is cooked, allow it to rest for a few minutes before flaking it into bite-sized pieces. Add the salmon to the salad bowl, drizzle with the balsamic vinaigrette, and toss gently to combine. Serve immediately.
