Crispy Calamari

Method

Crispy Calamari

  1. 1

    Prepare the Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels. Ensure they are completely dry to achieve a crispy texture.

  2. 2

    Mix the Coating

In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix until well combined.

  3. 3

    Coat the Calamari

Toss the dried calamari rings in the flour mixture until evenly coated. Shake off any excess flour.

  4. 4

    Heat the Oil

In a deep skillet or fryer, heat the oil to 350°F (175°C). Use a thermometer to ensure the oil is at the correct temperature for frying.

  5. 5

    Fry the Calamari

Carefully add the coated calamari rings to the hot oil in batches, being careful not to overcrowd the pan. Fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Spicy Aioli

  1. 6

    Mix the Ingredients

In a bowl, combine the mayonnaise, minced garlic, lemon juice, sriracha sauce, salt, and black pepper. Stir until smooth and well combined.

  2. 7

    Taste and Adjust

Taste the aioli and adjust the seasoning with more salt, pepper, or sriracha if desired.

Garnish

  1. 8

    Prepare the Garnish

Slice the lemons into wedges and chop the fresh parsley.
