Calamari Preparation

Prepare the Calamari
Thaw the calamari rings if frozen and pat them dry with paper towels.

Make the Breading
In a bowl, mix the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper.

Coat the Calamari
Dip the calamari rings in buttermilk, then dredge them in the flour mixture until fully coated.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Fry the coated calamari rings in batches for 2-3 minutes or until golden brown. Remove them and place them on paper towels to drain excess oil.

Sauté the Garlic
Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Add Tomatoes and Seasonings
Stir in the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar. Mix well.

Simmer the Sauce
Allow the sauce to simmer for 15-20 minutes, stirring occasionally until it thickens slightly.

Serve
Serve the fried calamari hot with marinara sauce on the side for dipping.
