Cooking Instructions

  1. 1

    Prepare the Chicken

Season the chicken breasts with salt and black pepper. Heat olive oil in a large skillet over medium-high heat and sear the chicken until golden brown on both sides and cooked through, about 6-7 minutes per side. Remove from skillet and keep warm.

  2. 2

    Cook the Pancetta and Mushrooms

In the same skillet, add pancetta and cook until crispy. Add sliced mushrooms and sauté until they are browned and tender, about 5 minutes.

  3. 3

    Make the Marsala Sauce

Pour in the Marsala wine, scraping the bottom of the skillet to deglaze. Let it simmer for 3-4 minutes until reduced by half. Add chicken broth and heavy cream, stirring to combine. Let it simmer for an additional 5 minutes until the sauce thickens.

  4. 4

    Combine and Serve

Return the chicken to the skillet, coating it well with the sauce. Cook for another minute to heat through. Serve hot with roasted carrots and mashed potatoes on the side.
