Cook the Filet

Preheat the grill or skillet over medium-high heat. Season the filet mignon with olive oil, salt, and black pepper. Sear each side for about 4-5 minutes for medium-rare, or to your desired doneness. Remove from heat and let rest.

Mashed Potatoes

Prepare Mashed Potatoes

Peel and chop russet potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot. Add butter, heavy cream, salt, and black pepper. Mash until creamy and smooth.

Asparagus

Roast the Asparagus

Preheat the oven to 400°F (200°C). Trim the asparagus and toss with olive oil, salt, and black pepper. Roast in the oven for 12-15 minutes, until tender.

Tarragon Bearnaise

Make Bearnaise Sauce

In a saucepan, combine shallots, white wine vinegar, and half of the tarragon. Simmer until reduced by half. Strain and cool. In a bowl, whisk egg yolks and the reduction over a double boiler until thick. Slowly whisk in melted butter until emulsified. Stir in remaining tarragon, salt, and pepper.
