    Brining the Pork Chop

    In a large bowl, mix water, kosher salt, brown sugar, black peppercorns, and smashed garlic cloves until dissolved. Submerge the pork chop in the brine, cover, and refrigerate for at least 4 hours or overnight.

    Preparing the Fingerling Potatoes

    Preheat the oven to 400°F (200°C). Cut the fingerling potatoes in half lengthwise and toss them with olive oil, salt, pepper, and fresh rosemary. Spread them on a baking sheet and roast for 25-30 minutes until golden and tender.

    Grilling the Pork Chop

    Preheat the grill to medium-high heat. Remove the pork chop from the brine, rinse under cold water, and pat dry. Grill the pork chop for about 6-7 minutes per side or until it reaches an internal temperature of 145°F (63°C).

    Cooking the Broccolini

    In the last 5 minutes of grilling the pork chop, place the broccolini on the grill. Cook until tender, about 4-5 minutes. Drizzle with olive oil and season with salt and pepper to taste.

    Once everything is cooked, plate the grilled pork chop alongside the roasted fingerlings and grilled broccolini. Enjoy your meal!
