    Prepare the Chicken

    Season the chicken breasts with salt and pepper. Dredge each breast in flour, shaking off the excess.

    Cook the Chicken

    In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for 3-4 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

    Make the Sauce

    In the same skillet, melt 2 tablespoons of butter. Add the white wine and lemon juice, scraping the bottom of the skillet to deglaze. Stir in the capers and simmer for 2-3 minutes.

    Finish the Sauce

    Return the chicken to the skillet and coat in the sauce. Add the remaining butter and stir until melted.

    Cook the Pasta

    In a separate pot, cook the angel hair pasta according to package instructions. Drain and toss with a little olive oil to prevent sticking.

    Serve

    On a plate, place a serving of pasta, top with the chicken piccata, arugula, and sprinkle with parmesan cheese. Serve immediately.
