Fries and Toppings

Method

Preparation and Cooking

  1. 1

    Prepare the Fries

Wash and peel the russet potatoes. Cut them into thin strips (about 1/4 inch thick) to make fries.

  2. 2

    Soak the Fries

Place the cut fries in a bowl of cold water for about 30 minutes to remove excess starch. This helps them become crispier when fried.

  3. 3

    Dry the Fries

Drain the fries and pat them dry with a clean kitchen towel.

  4. 4

    Fry the Potatoes

In a deep fryer or large pot, heat olive oil over medium-high heat. Once the oil is hot (around 350°F or 175°C), carefully add the fries in batches, frying until golden brown and crispy (about 4-5 minutes per batch).

  5. 5

    Season the Fries

Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with sea salt and toss with truffle oil.

  6. 6

    Prepare Truffle Mayo

In a small bowl, combine mayonnaise, truffle oil, and lemon juice. Mix well until smooth.

  7. 7

    Serve

Plate the fries and sprinkle with grated Parmesan cheese and chopped chives. Serve with truffle mayo on the side for dipping.
