Prepare the Fries
Wash and peel the russet potatoes. Cut them into thin strips (about 1/4 inch thick) to make fries.

Soak the Fries
Place the cut fries in a bowl of cold water for about 30 minutes to remove excess starch. This helps them become crispier when fried.

Dry the Fries
Drain the fries and pat them dry with a clean kitchen towel.

Season the Fries
Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with sea salt and toss with truffle oil.

Prepare Truffle Mayo
In a small bowl, combine mayonnaise, truffle oil, and lemon juice. Mix well until smooth.

Serve
Plate the fries and sprinkle with grated Parmesan cheese and chopped chives. Serve with truffle mayo on the side for dipping.
