Prepare the Hollandaise Sauce
In a heatproof bowl, whisk together the egg yolks, lemon juice, and salt. Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture thickens.

Add Butter
Slowly drizzle in the melted butter while whisking until the sauce is smooth and creamy. Stir in cayenne pepper and keep warm.

Poach the Eggs
In a large pot, bring water to a simmer. Crack each egg into a small bowl, then gently slide it into the simmering water. Poach for about 3-4 minutes or until the whites are set but the yolks remain soft.

In a skillet, cook the Canadian bacon over medium heat until heated through, about 2-3 minutes per side.
