Fermentation
Cover the jar with a clean cloth or coffee filter secured with a rubber band. Let it sit in a warm, dark place for 7 to 14 days, depending on your taste preference. Taste it after a week; the longer it ferments, the less sweet and more vinegary it will become.

Bottling
After fermentation, remove the SCOBY and set it aside for your next batch. Pour the kombucha into bottles, leaving some space at the top. You can add flavoring (like fruit or herbs) at this stage if desired. Seal the bottles and let them ferment at room temperature for another 3 to 7 days for carbonation.

Refrigerate
Once carbonated to your liking, refrigerate the bottles to stop the fermentation process. Enjoy your homemade kombucha chilled!
