Directions

  1. 1

    Prepare the Crostini

Preheat the oven to 400°F (200°C). Slice the baguette or ciabatta into 1/2-inch slices and arrange them on a baking sheet. Brush one side of each slice with olive oil and bake for about 10-12 minutes or until golden and crispy.

  2. 2

    Caramelize the Cipollini Onions

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced cipollini onions and cook, stirring occasionally, for about 15-20 minutes, until they are golden brown and caramelized. Season with salt and pepper to taste.

  3. 3

    Sauté the Wild Mushrooms

In the same skillet, add the remaining 2 tablespoons of olive oil. Increase the heat to medium-high and add the wild mushrooms. Sauté for about 5-7 minutes, or until they are tender and cooked through. Season with salt, pepper, and fresh thyme leaves.

  4. 4

    Assemble the Crostini

On each crostini, layer a spoonful of sautéed wild mushrooms, a few pieces of caramelized cipollini onions, and a generous sprinkle of grated Gruyere cheese. Drizzle a small amount of truffle oil over the top.

  5. 5

    Serve

Serve immediately while the crostini are warm and the cheese is slightly melted. Garnish with additional thyme leaves if desired.
