Olio Stew Directions
1. Sauté the Vegetables
In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
2. Add the Root Vegetables
Stir in the diced carrots, celery, and potatoes. Cook for about 5-7 minutes, allowing the vegetables to soften.
3. Incorporate the Remaining Ingredients
Add the bell peppers, zucchini, crushed tomatoes, vegetable broth, chickpeas, bay leaves, thyme, cumin, salt, and pepper. Bring the mixture to a boil.
4. Simmer the Stew
Reduce the heat to low and let the stew simmer for 30-35 minutes, until the vegetables are tender.
5. Finish with Spinach and Lemon Juice
Stir in the fresh spinach and lemon juice. Let it cook for an additional 5 minutes until the spinach has wilted.
6. Garnish and Serve
