1. Prepare the Ingredients
Wash and chop all fresh ingredients including basil, zucchini, and red bell pepper. Halve the cherry tomatoes and mince the garlic.
2. Sauté the Vegetables
In a large skillet, heat the extra virgin olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
3. Add Seasonal Ingredients
Add the diced zucchini and red bell pepper to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender.
4. Incorporate Tomatoes and Seasonings
Stir in the halved cherry tomatoes, salt, and black pepper. Cook for an additional 5 minutes until the tomatoes soften.
5. Finish with Fresh Herbs and Cheese
Remove the skillet from heat, add the fresh basil leaves and grated Parmesan cheese. Drizzle with lemon juice and toss gently to combine.
6. Serve
