1. Cook the Pasta

Bring a large pot of salted water to a boil. Add the fresh pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

2. Prepare the Vegetables

While the pasta is cooking, wash and chop the zucchini, bell pepper, and carrot into bite-sized pieces. Halve the cherry tomatoes.

3. Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the chopped zucchini, bell pepper, and carrot. Cook for 5-7 minutes until the vegetables are tender but still crisp.

4. Combine Pasta and Vegetables

Add the cooked pasta to the skillet with the sautéed vegetables. Toss to combine, adding reserved pasta water a little at a time as needed to create a light sauce.

5. Season and Serve

Season with salt and black pepper to taste. Remove from heat, add the cherry tomatoes, and toss again. Serve warm, topped with grated Parmesan cheese and fresh basil.
