Prepare the broth
In a saucepan, heat the vegetable broth over medium heat and keep it warm throughout the cooking process.

Sauté the vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent, about 3-4 minutes. Add the diced carrot, zucchini, and bell pepper, and cook for another 5-7 minutes until the vegetables are tender.

Add the rice
Stir in the Arborio rice and cook for 1-2 minutes, allowing it to toast slightly and absorb the flavors.

Incorporate the broth
Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Wait until most of the liquid is absorbed before adding the next ladle. Repeat this process until the rice is creamy and al dente, about 18-20 minutes.

Finish with cheese and herbs
Stir in the peas, grated Parmesan cheese, and chopped parsley. Season with salt and black pepper to taste. Cook for an additional 2-3 minutes until everything is heated through.

Remove from heat and let sit for a couple of minutes. Serve warm, garnished with additional parsley if desired.
