    Prepare the Vegetables

    In a skillet, heat olive oil over medium heat. Add zucchini, butternut squash, and wild mushrooms. Sauté until tender, about 5-7 minutes.

    Mix the Eggs

    In a bowl, whisk together the eggs, tarragon, dill, parsley, salt, and black pepper. Pour the egg mixture over the sautéed vegetables in the skillet.

    Cook the Frittata

    Cook on the stovetop for 5 minutes until the edges set. Then transfer the skillet to a preheated oven at 350°F (175°C) and bake for 15-20 minutes until fully set.

    Add Cheese

    Sprinkle the shredded Gruyere cheese on top and return to the oven for an additional 5 minutes until the cheese is melted and bubbly.

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Base

    In a bowl, combine grated potatoes, chopped onion, salt, and black pepper.

    Layer and Bake

    In a greased baking dish, layer the potato mixture. Pour heavy cream over the top and dot with butter. Sprinkle the Gruyere cheese over the top.

    Bake

    Bake in the preheated oven for 30-35 minutes until golden and crispy on top.
