    Cook the Steak

    Heat olive oil in a skillet over medium-high heat. Season the flat iron steak with salt and black pepper. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest.

Sunnyside Up Eggs

    Cook the Eggs

    In a separate pan, melt butter over medium heat. Crack the eggs into the pan and cook until the whites are set but the yolks are still runny. Season with salt and black pepper.

Chimichurri Sauce

    Make the Chimichurri

    In a food processor, combine fresh parsley, garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Blend until smooth. Adjust seasoning to taste.

Hash Brown Potato Gratin

    Prepare the Gratin

    Preheat the oven to 375°F (190°C). Thinly slice the potatoes. In a greased baking dish, layer the potatoes, sprinkle with salt, pepper, and cheddar cheese. Pour heavy cream over the top. Dot with butter. Bake for about 45 minutes or until golden brown and bubbly.

Assembly

    Plate the Dish

    Slice the rested steak and place it on a plate. Add the sunnyside up eggs on the side. Drizzle chimichurri sauce over the steak and serve with a portion of hash brown potato gratin.
