Method

Prepare the Creamed Corn Grits

    Cook the Grits

    In a large pot, bring water to a boil. Stir in the grits and reduce to a simmer. Cook for about 20-25 minutes, stirring occasionally until thickened.

    Add Cream and Corn

    Stir in the heavy cream, corn kernels, butter, salt, and pepper. Cook for an additional 5 minutes, stirring until creamy. Set aside.

Make the Tasso Ham Poblano Pepper Pan Gravy

    Sauté the Aromatics

    In a skillet, cook the diced Tasso ham over medium heat until browned. Add the poblanos, onion, and garlic. Sauté until the vegetables are tender.

    Make the Gravy

    Sprinkle the flour over the mixture and stir well. Gradually add the chicken broth, stirring continuously until the gravy thickens. Season with black pepper.

Cook the Pan Roasted Shrimp

    Sear the Shrimp

    In a separate skillet, heat olive oil over medium-high heat. Season the shrimp with salt, pepper, and paprika. Add the minced garlic and shrimp to the skillet, cooking for 2-3 minutes on each side until they are pink and opaque.

    On a plate, spoon the creamed corn grits, top with the pan-roasted shrimp, and drizzle the Tasso ham poblano pepper gravy over the top. Serve immediately.
