Prepare the Chicken
Preheat the oven to 425°F (220°C). Pat the organic half chicken dry with paper towels. Rub olive oil all over the chicken and season generously with salt, black pepper, and fresh thyme.

Roast the Chicken
Place the chicken skin-side up in a roasting pan and roast in the preheated oven for about 45-50 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.

Sauté the Mushrooms
While the chicken is roasting, heat a skillet over medium heat. Add a tablespoon of olive oil and sauté the wild mushrooms until they are golden brown and tender, about 5-7 minutes. Season with salt and pepper to taste.

Make the Sauce
Once the chicken is done, remove it from the oven and let it rest. In the same roasting pan, add the sherry wine and Marsala wine, scraping up any browned bits from the bottom. Simmer for about 5 minutes until the sauce is slightly reduced.
