    Marinate the Pork

    In a bowl, combine the miso paste, soy sauce, brown sugar, minced garlic, and grated ginger. Mix well until smooth. Place the pork belly in a large zip-top bag or a shallow dish, and pour the marinade over the pork. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.

    Prepare the Oven

    Preheat your oven to 300°F (150°C).

    Roast the Pork

    Remove the pork belly from the marinade, reserving the marinade for later. Place the pork belly on a baking sheet lined with parchment paper, skin side up. Roast in the preheated oven for about 2.5 to 3 hours or until the pork is tender and the skin is crispy.

    Glaze with Marinade

    During the last 30 minutes of roasting, brush the reserved marinade over the pork belly to add flavor and shine.

    Rest and Slice

    Once the pork is done, remove it from the oven and let it rest for about 15 minutes. Slice into thick pieces.

    Garnish the sliced pork belly with sesame seeds and serve with pickled house vegetables on the side.
