    Prepare the Truffle Fries

    Preheat the oven to 425°F (220°C). Cut the potatoes into thin fries and place them on a baking sheet. Drizzle with truffle oil, season with salt, and toss to coat. Bake for 25-30 minutes, flipping halfway through, until crispy and golden.

    Cook the Onions and Mushrooms

    In a skillet over medium heat, add a little oil. Add the sliced cipollini onions and cook until caramelized, about 10-12 minutes. Remove and set aside. In the same skillet, add the wild mushrooms and sauté until browned, about 5-7 minutes. Season with salt and pepper.

    Cook the Wagyu Burger

    Form the wagyu beef into a patty and season both sides with salt and pepper. In a skillet or on a grill, cook over medium-high heat for about 4-5 minutes per side for medium-rare. In the last minute of cooking, place the Gruyère cheese on top to melt.

    Assemble the Burger

    Toast the brioche roll lightly. Spread the black truffle aioli on the bottom half of the roll. Place the cooked wagyu burger with melted cheese on top, followed by the caramelized cipollini onions and sautéed wild mushrooms. Top with the other half of the roll.

    Serve

    Serve the house burger with a side of truffle fries.
